New Series - I Found it on Pinterest & I DID it! Egg-less Vanilla Mug Cake with Blueberries

Hi all,

After another late night pinning a bunch of things I may or may not do on Pinterest, I've decided to start doing the pins I've pinned! I think many of us Pinterest addicts spend WAY too much time going through Pinterest pinning DIY projects, ideas, recipes that just end up on the world wide web and not in real life. So this new series is aimed towards bringing those pins out of Pinterest and in to my home and this case my tummy.

Just a few notes before we get started, as I work on the recipes depending on my taste I may adjust the ingredients. I will always link the original recipes/projects/ideas that are listed on Pinterest so you can check out the source.

Today's recipe is an Egg-less Vanilla Mug Cake with Blueberries. I got the recipe from Kirbie's Craving. It looks delicious but as I was making it I decided to tweak the ingredients, cut down on the sugar, add some vanilla and take out the crumbles. Kirbie's recipe though, makes a perfectly moist cake. All I've done below basically is just adjusting the sweetness level of the cake and balancing it out with a little bit of salt. You can click here for the original recipe.

Egg-Less Vanilla Mug Cake with Blueberries
Adapted from Kirbie's Craving

Ingredients:


  • 1/4 cup of flour (I used regular All Purpose flour) 
  • 1/8 tsp baking powder 
  • 1/16 tsp baking soda
  • 1 to 1 1/2 tbsp granulated sugar 
  • 1/4 tsp vanilla extract 
  • 1 Tbsp vegetable oil
  • 3 Tbsp milk (I used Lactaid milk)
  • A dash of salt (optional)
  • Blueberries 
You also need a microwave and a microwavable mug. 

Directions:
Mix all of the dry ingredients in the mug. Add the vanilla, oil and milk- mix well. Add the blueberries.

 Place all of the dry ingredients in the mug

 Mix the dry ingredients with a fork or a small whisk (salt- optional)

 Add the wet ingredients and mix well

 Add blueberries and gently fold them in the batter

Place mug in the microwave


 Cook in the microwave for about a minute. Everyone's microwave is going to have different temperature setting so I took mine out after a minute check the firmness of the cake and I put mine back in for another 15 seconds. After the cake is cooked all the way through, let it cool and serve.

I decided to enjoy mine with some powdered/confectioner sugar. You can certainly add the streusel from Kirbie's Craving, top it off with ice cream or whatever your heart desire. 


What I like about the recipe is that you can basically replace the blueberries with raspberries, chocolate chips, etc.
Final product

Final result is a soft, light, fluffy delicious cake


 I also made a chocolate variation of this, leaving the blueberries out and adding 1/2 tbsp of Hersey's Unsweetened Cocoa Powder. It's delicious!
