Warm Vanilla Pudding with Mango Compote
Over the weekend, my mom had purchased these yellow mangoes and she had cut one open and even though it was tender, it was not ripe and really sour. So I didn't want to waste the mangoes and decided to make a quick mango compote to go with the warm vanilla pudding my dad had already made.
Unfortunately since I did it on the fly, I don't have any picture other than the finish products but it was so delicious I just had to share it.
For the vanilla pudding, you can use either a pudding mix or make it from scratch with your favorite recipe.
A compote is basically fresh fruits that are cooked down in a sugar syrup. I love making fresh compote for filling cupcakes, as a jam or toppings.
If I'm cooking ripe fruits like strawberries or blueberries I would add a little bit of lemon juice and a rind to the mix but since this mango was just so sour, it didn't need the additional acid.
I put in equal parts of water and sugar into a saucepan and when it started to bubble, I added the diced mango and a dash of cinnamon. I cooked it for a bit in medium heat and then I let it simmer in low-medium heat. Mango has build in starch so I didn't need to add a binder since it was already the consistency that I like. But if you are making strawberry or blueberry compote and your mixture is a bit runny, you can add a little bit of corn starch to thicken it up.
I like my compote a little chunky so i just mashed it a little bit with my spatula but if you want yours smooth, you can always let the compote cool a little bit and then mix it in a blender or a food processor.
And here's the final product. I served it with warm because it was kind of chilly this weekend and it was such a good mid-day pick me up snack. Hope y'all have a wonderful day!
