Banana Spring Rolls Recipe

So today I've decided to share with you one of my favorite dessert recipe. This idea came to me after dining at P.F. Chang's and seeing it at the menu. I think mine tastes better and you can make a bunch for the family for the price of one @ PFC's. Now some recipes online would use wonton wrappers, but I extremely suggests buying the Spring Roll pastry sheet (it's square, do not purchase the clear, round Vietnamese wrappers). You can usually find it in the freezer aisle at an International supermarket. I prefer TYJ Spring Roll Pastry

Now, pastry sheet dries up really quickly, so the best way to keep them moist is to cover them with a wet (clean) kitchen towel. The sheets tend to stick together so make sure you are working with one layer and not two. Now for the recipe:
Feeds 4 (2 each)
8 Pastry Sheets
3 Medium Size Bananas
1/4 cup of brown sugar
Oil for frying (about 2 inch deep at 350 degrees)
Chocolate Chips (optional)
Ice Cream (optional)
Powdered Sugar (optional)
For every 8-10 pastry sheet (depending on how you big you want the Spring Rolls to be) I use about
3 medium size bananas cut banana into quarters.
When filling the pastry with the banana make sure that you are not over-filling the pastry because the pastry can tear. Gently toss the banana with the brown sugar and place the bananas at one corner of the sheet. Rolling it towards the middle as you would a burrito, before tucking the edges, I brush some water on the edges of the sheet to seal the wrapper into place.
Make sure that your oil is hot before putting the rolls in, or the outside won't get crispy. Gently place a couple of rolls at a time in the saucepan and fry the rolls turning it every so often to make sure that all sides gets crispy. Remove the rolls from heat and place it in a paper towel to get rid of the excess oil. Now the Banana Spring Rolls are ready to serve. You can serve it with Ice Cream (P.F. Chang's uses coconut ice cream) or simply with powdered sugar.
You can also make a variation of this recipe by adding chocolate chips inside the spring rolls to make Banana/Chocolate Chip Spring Roll which is just simply divine.
